I'm sure that the show's writers and producers will make a documentary explain how and why KITT can transform. In the meantime use you imagination on how KITT can do it, it's not that hard.

As I've said before I hate the stupid transformations but I don't think I have to worry too much as I think they are phasing it out. In last night's ep they didn't even use attack mode so we'll see where they go from here.

The defender came off as a rip off of KITT at least in basic premise. That would make him a rip off of a rip off, but really only ripping off himself.
