Dude, Barry was still pretty young when he was taken in. He was like 6 years old when that happened.... enough time to grow up together like they were siblings. That still makes it icky.
Not to mention the psychological implications behind a 6-year-old boy's crush lasting that long into adulthood on somebody you grew up with. Think about it-- What if on some level Barry feels beholden to Joe West and Iris West? On some subconscious level he really wants to become part of the West family, but the West family never really asked Barry to change his last name.
After all, it was never stated that the West family wanted Barry to change his name and that Barry refused. What if the reality is that Joe West and Iris West never asked Barry to change his last name, because they assumed that Barry would want to keep his family name. And all three of them didn't realize that Barry really wanted them to ask on some subconscious level. Now what's the best way to become a part of somebody's family? You marry into them if they can't adopt you for reasons. Hence, a long-lasting crush that resulted from emotional stunting AND a desire to become part of a loving family like the West family.
It's not like he was 16 years old when he was taken in or something like that. If he had been a older teenager when he was taken in by Joe West, then it would had been more understandable. That would mean that they didn't really have enough time to grow together as brother and sister, and Barry would only have to live in the West household for 3 years tops before he was old enough to live on his own. It would had been long enough to see Joe as a father figure, but not long enough to see Iris West as your sister.
