I'm not a huge gamer but I was just curious what everyone's favorite game for each console is. For the one I've played I'd say:

NES: Duck Hunt
SNES: Super Mario World 3, TNMT: Turtles in Time, Donkey Kong Country
Sega Dreamcast: Sonic the Hedgehog (one of the greatest and funnest games ever!)
N64: Starfox
PS2: Grand Theft Auto: Vice City (followed closely by Devil May Cry and Kingdom Hearts)
Xbox 360: Borderlands, Red Dead Redemption
