Is Chuck the only one that can handle the intersect? I get the impression from those guys when handling the intersect putting on sunglasses, that a normal human being will go insane if the Intersect is absorbed into their mind like right away.

Yes and no. He's not the only human who could handle it, though all humans probably couldn't handle it. At the end of S2E1, you can see Graham puts on sunglasses, but the men behind him take them off. They were primed to become human Intersects, like Chuck.

There were two reasons Bryce sent Chuck the Intersect: someone he could trust who was not affiliated with the agency, and because (based on his college testing) Chuck had the potential for being able to take all of the images and still recall them.

I think, if you watch in Chuck vs. the Alma Mater, they explain it better. It's not just taking the images in, it's being able to recall them when it counts. If Chuck just saw images and couldn't figure out what they meant or what the intelligence was telling him he'd be useless as the Intersect.
